Seed stratification
Stratification is a period of cold, moist conditions that breaks dormancy in certain seeds — many perennials and some vegetables (like spinach) germinate far better after it. Winter sowing harnesses it naturally; indoors it's a few weeks in the refrigerator in damp medium.
